Proper No. 12 Whiskey on a barrel

The perfect blend of smoothness and tradition

Not content on following the norm, our whiskey will always challenge convention and defy expectations.

Through much trial and error, painstaking measures were taken to bring the whiskey to fruition, creating close to one hundred blends before ultimately selecting the one and only proper whiskey.

The Result? A smooth, approachable whiskey that’s fit to mark every win and toast any and all victories.

Milling

Our locally sourced malted barley is hand-selected, milled into a fine grist and steeped in water sourced from a nearby spring which releases key natural sugars.

Fermentation

Yeast is added to the sugary liquid which facilitates the natural fermentation process and a low ABV beer called a wash is produced. At the end of the 50-hour fermentation, the wash is transferred to hand-made copper pot stills for distillation.

Distillation

The traditional triple distillation method uses copper pot stills, which create and fine tune the proper character. After each distillation, the strength of the spirit increases and the flavours evolve. At the end of the third distillation, the heart of the spirit is captured which gives a smooth, fruity character and a strength above 80% alcohol.

Maturation

Our coopers hand-select the finest former bourbon oak barrels that hold the rich character needed to age our proper whiskey. These ex-bourbon barrels are charred in order to give the spirit colour & flavour. Our spirit rests in the oak barrels for a minimum of four years developing through the years flavours of vanilla, honey and toasted wood.

Blending

Once matured, our Master Blender carefully selects the finest barrels of aged single malt & grain whiskies and marries them together using a secret recipe to create Proper No, Twelve Irish Whiskey.
